½ c organic oats (ground to flour)

¼ c organic flax seeds (ground)

2 organic bananas, smashed

1 tbs organic lemon juice

½ tsp baking soda

¼ tsp salt

2 tsp coconut sugar

1 tsp cinnamon

6 tsp ghee or butter

Optional: maple syrup, coconut sugar or chopped dates to increase sweetness

Grind oats and flax seeds in vitamix or high speed blender until flour consistency is reached. Add baking soda, salt. Blend in bananas and lemon juice to create batter. Fill each muffin tin halfway with batter. Add a tsp of butter or ghee, then sprinkle combined cinnamon and coconut sugar. Top with remaining batter, then sprinkle remaining cinnamon sugar mixture on top. Bake at 325 degrees for 20-23 minutes or until fork comes out clean.

Notes: This recipe is inspired by a Medical Medium recipe. Substitute chocolate chips, blueberries, nuts, etc. for cinnamon sugar and omit butter/ghee. The riper the bananas, the sweeter the muffins will turn out. Muffins will keep for several days if stored properly. These make great travel snacks!!
